网上买了一石磨和豆腐模具,周末在家做了豆腐干
7.点到时候不要一次就把酸浆全部倒进去,我是分了三次倒入的,没倒入一次,用勺轻轻的搅动,点到这样,豆浆有豆腐花出来,和水分离了,就差不多了,这个时候就不要再搅动了,再次点火烧开一下就关火。

整个过程主要是磨豆子和煮豆浆比较费时,上一下具体的过程:
1.黄豆和黑豆各250G,共500G,前一晚泡上,大概泡了12个小时,周日早上吃过早饭就开始磨豆子了

4.500g干豆子大概用5000ml的水来磨成浆,豆渣用布袋滤除。

5.放炉子上充分煮开,也就是浮在上面的泡沫基本都煮没有了,而且要稍微多煮些时候,煮出豆浆香味来,我大概是彻底煮开以后又煮了有10分钟这样关火。这个是5000ml的豆浆,关火以后,倒入1000ml的凉开水,这样,豆浆的温度大致就降到80度左右了,下面就可以点豆腐了

6.这时候拿酸浆过来准备点豆浆(这个酸浆是上次做豆腐留下的。第一次我做过一次豆腐,用恒顺9度米醋50g兑250g的水,这个是第一次当做酸浆来点豆浆的,第一次做过以后,就可以留下酸浆,以备以后做豆腐或豆腐干用了)

8.然后用滤勺隔着,用勺子盛出碗酸浆来,这个就可以留作下次点豆腐的酸浆了

9.这时候把豆腐模具拿出来,铺上最外层的那张布,因为今天做豆腐干,所以再铺上长条的做豆腐干的布,Image may be NSFW.

10.然后就可以把刚才点好的豆花舀到豆腐模里了,做豆腐干,自己看情况码好一层,把豆腐布盖过来,然后再码上一层豆腐花,如此全部弄完,然后把豆腐布和最外层的布都整理盖好

11.然后把上面压的板都放好,把压力板也放上去,拧紧,豆腐干的话压力大一些,做豆腐我一般都压一块板,豆腐干压两块板,而且压的力量大一些

12。就这样,放置大概1个半小时的时间,打开,豆腐干就做好了

13.拿出来的时候还是热点呢,放凉,放玻璃饭盒放入冰箱冷藏,自己做的相当干净又干,一个星期都没有问题,依然香喷喷的

14.每天早上做中午的饭菜带到单位,每次只需要那出4~5小块,切成丝,再搭配上香菇,黑木耳,胡萝卜,莴苣都切成丝,就可以炒出我和老公两人份的中午的菜了。这样每周周末做一次,可以吃一周没有问题啦

15.对了,差点忘记了,豆渣,这个可是好东西哦,很多人觉得它吃起来咯嗓子,其实也许是你没有找到恰当的方法来处理豆渣,我是把豆渣炒干,然后把青椒杏鲍菇切丝爆锅,然后和豆渣混在一起炒,再放点虾皮,如果再要有点香味,放点香菜或者放点小葱,炒出来以后也比较干的,青椒的水被豆渣吸取了部分,这样呢,可以买些煎饼,或者自己摊点薄饼,夹在里面吃,那是相当的美味哦
